If you're not familiar with Bubba's 33, it's a sports bar concept from parent company Texas Roadhouse and they make their pizzas from scratch. Texas Roadhouse is also the parent company of Jaggers, our favorite quick burger place in Noblesville - so they are definitely doing something right. If this place isn't on your radar, give it a try! For me, it's not the first place I think of when I think pizza, but they make it all in house it's not just re-heated freezer pizza like you find at other sports bars.
The vibe is kinda like a Texas Roadhouse but with more music videos and obviously sports. It's like Texas Roadhouse after hours with club lighting and 2000's rock music.
The garlic knots are to die for and they somewhat upstage the pizza actually. They have a perfectly plump shape, flakey outside and warm fluffy inside. They're topped with what I would describe as a garlic butter froth and curls of fresh-grated Parmesan cheese. Top notch!
The pizza crust is a sturdy but foldable hand tossed variety, a little chewy but decent flavor. I wouldn't exactly describe it as fluffy, but it certainly wasn't crispy or hard either. It's a jaw workout - does that help you imagine it?
The toppings on my Goat Cheese Arugula seemed like most if not all were put on after the pizza was cooked so the greens wouldn't wilt, which was fine. It had baby arugula, grape tomatoes, hot cherry peppers, goat cheese crumbles and balsamic glaze. It was very fresh and I'm usually not a balsamic guy but the tomatoes and cherry peppers were slightly sweet.
Chris got a big ol' pepperoni pizza, and we actually took some home with us that were just as good reheated. The crust easily holds up to the grease and stays firm toward the center. I'm not sure what they bake it on but I didn't see screen marks or cornmeal, it almost had a pretzel aftertaste.
So there you have it - don't sleep on Bubba's 33 made from scratch pizza. I'm pretty sure Texas Roadhouse is slowly taking over the planet because the location by our house has added two new additions and the parking lot has been packed right through the pandemic.
